For Oscar night, I made Pesto Chicken with fettuccine. Yum!
I don't really follow an exact recipe, but here is approximately what I did.
In a food processor combine:
1) about 1 cup of pine nuts (you may need to add more, depending on consistency)
2) 1 cup of FRESH basil (fresh is really key here)
3) 1 cup of chicken broth
*most people use oil, this is just a tad bit healthier to use the broth. I find it makes it creamier as well.*
4) 2 cloves of garlic (I always do at least one more because I LOVE garlic)
I reserve about 1/2 cup (depending on how much pasta, this amount was for about 4 servings) of pesto in a small bowl. As for the rest, smother the chicken in it! Then place the chicken on a baking sheet with parchement and bake at 350 for about 20/25 mins. Boil up your favourite pasta, drain and toss in the pesto you set aside.
