Caribbean Burgers - Rachel Ray



(The after picture was devoured too quickly for me to capture it!)



2 lbs. of ground chicken (I used 1/2 lb. of extra lean ground beef and 1/2 lb. spicy italian sausage and made it a bit smaller, keeping the same amount of spices. We like it spicy.)1 1/2 tsp ground allspice

1/2 tsp ground cinnamon
1/2 tsp grated nutmeg (fresh grated is the best)
1 tsp of fresh or dried thyme
1/2 tsp. cayenne pepper
1 tbsp light or dark brown sugar
5 to 6 dried basil leaves OR 2 tbsp. fresh cilantro
salt and black pepper
1 diced jalapeno, seeded

Place meat into a mixing bowl. Combine dry spices and brown sugar and sprinkle evenly over meat. Add fresh basil or cilantro and lots of salt and black pepper. Add jalapeno. Mix until combined. Form into four patties with a divot in the centre. (So when the meat rises there won't be a bump.)

Cook on a medium grill, or in a pan.
