Ingredients:
- 1 cup butter (yikes!)
- 1 cup white sugar
- 1/2 cup br. sugar (I switched them and did more brown than white)
- 2 eggs
- 1 tsp. vanilla extract
- (I added 1 tsp. almond emuslion {emulsion measures 1 for 1 of extract} and 1 1/2 tsp. coconut extract)
- 2 1/4 cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 2 cups semi-sweet chocolate chips
- 2 cups flaked coconut (I used unsweetened medium)
1) Cream together butter and sugars until light and fluffy
2) Beat in eggs, one at a time
3) Then stir in vanilla (and other extracts, if you wish)
4) Add the dry ingredients next and mix well. Then fold in the chocolte and coconut. 5) Form dough into balls and place on a cookie sheet
Here I used my two favourite things to make cookies 1-my cookie baller which makes them all the same size and 2- my stoneware cookie sheet from Pampered Chef. Thanks for the tip Melissa! It cooks the cookies evenly and leaves them perfectly golden brown on the bottom.
6) Cook at 375' for 8 - 10 minutes
